Ingredients

  • 2 Litre Full Fat Milk
  • ½ cup + 2 tbsp Sugar
  • 3 tbsp Milk Powder
  • 100 Grams Fresh Cream
  • Cardamom Optional

Instructions

  • Add a little water and two liters of milk into a thick-bottomed pan. Once the boil starts boiling, stir it well once.
  • Gradually incorporate three tablespoons of milk powder into the boiling milk, adding it in batches to ensure even mixing.
  • Add 100 grams of fresh cream, mixing thoroughly until all ingredients are well combined. Tip* – While homemade fresh cream is an option, store-bought cream yields the best results.
  • Simmer on a low to medium flame. Stir and clear the sides of the pan regularly.
  • Reduce the milk by approximately 30%. Turn off the flame.
  • Add ½ cup plus two tbsp of sugar in another pan, allowing it to melt slowly over medium heat. Tip* – It is crucial not to touch or stir the sugar while it melts.
  • After a few minutes, the sugar will begin to liquefy.
  • Once it reaches a golden color, gently stir it.
  • Carefully pour the melted sugar into the milk mixture.
  • Turn the flame back on, and continue stirring until all sugar lumps dissolve completely.
  • Boil the mixture for 2 to 3 minutes. The milk is reduced by 40%. A caramelized flavor of kulfi is ready.
  • To cool the mixture, stir continuously. Tip* – This will prevent a layer of cream from forming on top.
  • Blend the mixture with the hand blender for a smooth texture. Add some cardamom powder if you like the flavor.
  • Next, pour the kulfi mixture into your molds, leaving some space at the top. For roll-cut kulfi, fill the mixture in the paper cups and cover it with foil paper or in a round box. Freeze them overnight.
  • Tear the paper from the cups and cut the kulfi into desired shapes.
  • Transfer the kulfi pieces to a bowl and top with rose syrup and nuts.
  • For stick kulfi, insert a stick into the mold and gently warm it in your palms, which will easily remove it from the mold. Enjoy your homemade kulfi!
