  • 1 Raw Mangoes
  • 2 Green Chili
  • ½ tsp Salt
  • ½ tsp Rock Salt
  • ½ tsp Chili Powder 
  • 1 tsp Red Chili Flakes

  • Take one raw mango, which is less sour (tangy). Wash it well with water. Cut the stem and peel the skin.
  • Cut them into small pieces and place them in a grinding jar.
    Add two green chili and two tbsp of water and blend it well. Tip*- For flavor, you can also add fresh coriander. The color of the gathiya may turn light green.
  • Add 1 tsp of red chili flakes into a grindstone and crush it. 
  • Ensure you crush the chili flakes and add to the mixture. Else, it may get stuck in the mold holes. 
  • Add the prepared mango puree, ½ tsp salt, ½ tsp rock salt, a pinch of turmeric powder, ground red chili flakes, ½ tsp red chili powder into a mixing bowl. Tip* – Add cumin or carom seeds for extra flavor. 
  • Mix all the ingredients well. A medium-consistency batter is ready.
  • Take 1½ cups of gram flour. Add in batches and mix until a medium-consistency mixture is ready. Tip* – The amount of gram flour required will depend on the moisture in the mango puree. 
    Only 2 tbsp from 1½ cups of gram flour is left.
  • Add 1½ tbsp of oil and mix all the ingredients well.
  • Transfer the batter into the greased sev machine with the help of the spoon and close the device.
  • To check the oil temperature, drop a piece of dough into the oil; if it floats up after a few seconds, the oil is perfect for frying. Tip*- The oil temperature should be hot. Do not fry in too hot oil.
  • Now press circularly, rotate the machine, and drop the gathiya into the hot oil.
  • Now reduce the flame to medium. Do not flip the gathiya to the other side immediately. Let the gathiya fry for a few minutes.
  • Flip and fry on both sides on a medium to high flame until golden in color.
  • Transfer the gathiya to a kitchen napkin.
  • Store in an air-tight container and enjoy them at tea time or anytime. The gathiya stays fresh for a month.
